- Learn about sources of energy, proteins, vitamins and mineral with their functions within human body
- Record food intake over three-day period
- Using food charts provided and internet resources, determine average daily caloric intake
- Determine basal metabolic rates and average energy expenditures over three-day period
- Determine number of calories to be obtained from carbohydrate, lipid and protein sources to satisfy energy expenditures
- Compare intake of vitamins and minerals to recommended dietary allowances
